It was Pancake Tuesday earlier this week. I love pancakes - they’re so versatile! You can have them for breakfast, lunch, dinner or snack, and they go with almost anything. They’re also relatively easy to make vegan, dairy-free, gluten-free, egg-free, whatever you need.
This Tuesday, I opted for none of those and had mine with bacon and maple syrup, washed down by a pot of tea. No, it wasn’t all for me. Lucky for me, my partner is currently not working due to Ireland’s COVID-19 restrictions, so most days, he has lunch ready for me. Not everything in lockdown is bad.
